1. Sourcing Fresh A2 Milk

It all begins with fresh, whole milk from Gir cows. The milk is collected every day from healthy cows that graze freely. This milk, rich in A2 proteins and nutrients, is the foundation of our ghee. 2. Curd Setting

The fresh milk is first boiled and then cooled to around body temperature. We add a natural starter culture to it and let it sit in an earthen pot overnight to ferment. By morning, the milk transforms into thick curd (yogurt). This step is crucial – unlike quick industrial methods that skip straight to butter, we follow tradition by turning milk to curd, which enhances the ghee’s nutritional profile and digestibility.

3. Hand Churning (Bilona)

The curd is then churned using a wooden churner (called bilona) in the traditional way. We churn it both clockwise and counter-clockwise rhythmically. This slow churning process separates the butter (makhan) from the buttermilk. The butter, which contains all the fats from the milk, rises to the top. 4. Butter to Ghee

The freshly obtained butter is now heated on a low flame in a thick iron kadai (or sometimes a heavy clay pot, staying true to tradition). This is done patiently and vigilantly. As the butter simmers, it begins to clarify – water content evaporates and milk solids brown and sink, leaving behind liquid gold ghee. 5. Filtering and Packing

Finally, the hot ghee is filtered through a fine muslin cloth to remove the browned milk solids (which are often enjoyed as a crunchy snack known as ghee residuum or beri). The clear, golden ghee is then poured into clean glass jars and allowed to cool and solidify into a grainy texture. We pack each jar by hand and seal it, preserving the freshness and aroma.
